It´s for example, to show how the melting point shifts with the heating rate. The idea is to make an x axis with temperature and a y axis with several graphs stacked one behind the other in order to not mess all of them up.
It´s like to apply a y-offset to every wave but the first one. I don´t know if there is a better way to do this.
A similar effect can be produced simply using many traces with offsets. You can see it in a demo experiment: File->Example Experiments->Graphing Techniques->Fake Waterfall Plot.
