How to plot a map in the polar region, i.e. Arctic or Antarctic

There is an example experiment that demonstrates how to do projections:

File->Example Experiments->Feature Demos 2->Map Projections Demo.pxp

Once you load that experiment you can enter 90 for the center latitude for an Orthographic projection to get that view with the continent outline waves supplied.
