I think it would be premature to state that Igor works flawlessly under an operating system that has not yet been released. However we have done some testing using the Windows 7 release candidates and have not found any problems. We don't expect to find problems with Igor 6 and Igor 6.1.
By now I'm using Igor Pro 6.11 on Windows 7 Professional for around two weeks. No errors/issues occured that have an impact on the usability of the software. Mostly I use Igor to process simple xy data (import -> display -> do some fitting procedures -> organizing data). Even the export of graphics works works flawlessly for jpg, png, eps and pdf (tested).
